A hearty winter warmer that all the family love.
1kg Beef mince.
8 med Potatoes.
1/2 cup Tomatoe paste.
1 small can Chopped Tomatoes.
1/2 cup fresh/frozen Peas.
1/2 cup fresh/frozen Corn kernals.
1 Carrot, finely diced.
1 Brown Onion finely sliced.
2 cloves of crushed Garlic or pre minced equivillant.
1 cup grated Cheese.
Brown Mince in a deep frying pan, add Onion, Garlic, Peas, and Corn.
Stir through Tomatoe paste and add canned Tomatoes.
Allow to simmer for approx 30 mins to thicken, stirring occasionaly.
Peel and boil Potatoes until tender.
Drain, then mash with Butter and milk until light and fluffy.
Ladle mince into a baking dish and top with Mashed potatoe to the edges.
Top with grated Cheese and place under the griller until Cheese melts and top is golden.
Lovely served with crusty bread to soak up gravy.
